2 cups all-purpose flour
1 tablespoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter or margarine, softened
1 tablespoon vanilla extract
1 cup confectioners' sugar
2 large eggs
1 cup mashed bananas
1/3 cup plain yogurt
whipped cream
2 cups all-purpose flour

1 cup mashed bananas
1/3 cup plain yogurt

Sift together the flour, baking soda, and salt
Beat the butter with the vanilla extract
Add the confectioners' sugar, beating well
Add the eggs one at a time, continuing to beat
Add the mashed bananas, followed by alternating additions of the dry ingredients and yogurt, beating just until combined
Grease mini muffin tin cups with butter or margarine, filling them 2/3 full
Bake in a moderate oven (170°F) for 25-28 minutes or until a toothpick inserted into the center comes out clean
Remove from the mini muffin tin and let cool
Cut the tops off each fritter, fill with whipped cream, and cover again.
