4 medium-sized sweet potatoes

Boil the sweet potatoes, without peeling, until they become tender
Peel and mash them while still warm
Add 2 tablespoons of butter or margarine, all-purpose flour, eggs, and salt
Mix well, place on a surface dusted with all-purpose flour, and work the dough until it becomes smooth
Form fritters of 4cm in diameter using this dough and cook them in boiling water for about 5 minutes
Before removing all the fritters, test one to see if it's cooked
Remove with a slotted spoon and place in a warm serving dish
Melt the remaining butter or margarine in a frying pan, add cake flour, and lightly brown it
Add the fritters and simmer them in this mixture over low heat, until they're coated on all sides
You can serve them simple or as a accompaniment to meat dishes
