Combine the eggs with the sweet potatoes
Add the onion, flour, salt, yeast, and melted butter
Gently fold in the egg whites and spoon into greased muffin cups
Bake in a hot oven (400°F) for 20 to 25 minutes
Yield: 12 fritters.
