Dough:
1/2 cup (1 stick) unsalted butter,
1/2 cup all-purpose flour,
2 eggs,
1 tablespoon baking powder,
1/4 cup crystallized ginger,
Sauce:
1/2 cup passion fruit puree concentrate
2 cups water,
1/3 cup all-purpose flour
Dough:

Cream the butter with the sugar until smooth

Add the eggs one at a time and beat until fluffy

Gradually add the flour and baking powder, beating until well combined

Mix in the ginger

Pour the dough into individual molds greased with butter

Bake in a water bath at medium heat until a toothpick inserted comes out clean
Let cool before serving

Sauce: mix all ingredients and simmer over low heat, stirring constantly to form a thick sauce
Serve with the fritters.
