3 cups of fresh peas, cut into cubes

Fry the pea cubes in butter or margarine until they're golden brown but not too crispy
In a bowl, combine the eggs, flour, baking powder, salt, and white pepper
Add the milk and mix until smooth
Add the peas to the mixture and let it rest for 1/2 hour
Bring some salted water to a boil in a large pot
When boiling well, add the pea mixture by spoonfuls (about 5 or 6 at a time)
Cook for about 10 minutes, then remove with a slotted spoon and drain on paper towels
After cooking all the fritters, place them in a greased baking dish and bake in a hot oven (400°F) for about 7 minutes, or until lightly golden
Serve warm, with chicken or beef broth
Yields 18 to 20 fritters.
