Soak the cod in vinegar overnight and be sure to change the water three times
Drain, boil, remove the skin and bones
Place the cod on a clean cloth, wrap it up, and beat it well with a meat mallet until it's completely shredded
Alternatively, use a food processor or blender
Cook the potatoes, drain, peel, and blend while still hot, then mix with the cod
Add the egg yolks one at a time, stirring well
Combine the parsley, onion, butter, and black pepper
Taste and stir well
Finally, add the beaten egg whites and stir carefully
Shape into cakes using two spoons and fry in plenty of hot oil
Drain on paper towels
