Bring the milk to a boil
Add the semolina, butter or margarine, and salt
Cook over low heat, stirring constantly, until thickened
Remove from heat and let cool for 10-15 minutes
Add the eggs one at a time, beating well after each addition
Let this mixture rest for 1 hour
Dollop this mixture with a spoonful into boiling beef or chicken broth
Cover and cook over low heat for 10 minutes
Yield: 24 to 26 fritters.
