3 cups fresh tomatoes, diced

Fry the bacon until crispy and drain excess fat
Reserve the rendered fat
Fry the onion and bell peppers in the reserved bacon fat for about 10 minutes
Combine half of the bacon with the onion, bell peppers, and cooked quirera
Taste and adjust seasoning as needed
Add the diced tomatoes and transfer to a baking dish
Top with the remaining bacon and serve with roasted meats or poultry
