2 cups (about 4 oz) of leftover cooked fish

1 tablespoon of all-purpose flour
Salt and black pepper to taste
Oil for frying

Flake the fish with your fingers and remove any bones
Place in a bowl and combine with the flour and egg
Mix well and season with salt and black pepper
Shape into small balls and set aside
Heat the oil and fry the fritters in batches, allowing each batch to cook for about 3-4 minutes or until they are golden brown
Remove with a slotted spoon and drain on paper towels
Serve warm.
