1/3 cup of butter or margarine
1/2 cup of sugar
1 tablespoon of vanilla
1 egg
1 1/4 cups of all-purpose flour
1 1/2 teaspoons of active dry yeast
1/2 cup of pineapple juice from a can
1 cup of pineapple in syrup, drained
3/4 cup of shredded coconut
1/3 cup of brown sugar (well-packed in the cup)
3 tablespoons of melted butter or margarine
1/3 cup of butter or margarine
1/2 cup of sugar
1 tablespoon of vanilla

Beat the butter or margarine, sugar, and vanilla
Add the egg and beat well
Sift the flour with yeast
Add to the previous mixture, alternating with pineapple juice, beating well
Spread half of the dough in a small baking dish, 23 x 30cm
Top with pineapple
Place the remaining dough on top
Mix the coconut with brown sugar and sprinkle on top
Finally, brush with melted butter or margarine
Bake in a moderate preheated oven (180°) for about 30 minutes
Cut into squares to serve
