1 cup of butter
1 3/4 cups of sugar
6 eggs
2 1/4 cups of all-purpose flour
1/2 teaspoon of baking powder
1/2 teaspoon of ground ginger
1/4 teaspoon of salt
3/4 cup of pineapple puree (fresh or canned)
1 cup of shredded coconut
1 cup of butter
1 3/4 cups of sugar

2 1/4 cups of all-purpose flour
1/2 teaspoon of baking powder
1/2 teaspoon of ground ginger
1/4 teaspoon of salt
3/4 cup of pineapple puree (fresh or canned)
1 cup of shredded coconut
Grease a bundt pan with 25 cm diameter
Beat the butter and sugar until light, then add eggs one at a time
Add remaining ingredients and mix until well combined
Pour into prepared pan and bake in a moderate oven for 50 minutes
Let cool before turning out onto a plate and serving.
