1 1/2 cups all-purpose flour
3/4 cup brown sugar
1/2 cup unsalted butter or margarine, softened
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1 egg
1/2 cup plain yogurt
1 1/2 cups all-purpose flour
3/4 cup brown sugar
1/2 cup unsalted butter or margarine, softened
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1 egg
1/2 cup plain yogurt
Mix together the flour and brown sugar in a bowl
Add the softened butter or margarine, 1/2 teaspoon of ground cinnamon, and mix until well combined
Set aside 1/2 cup of this mixture
Add the remaining spices (cinnamon, nutmeg, salt, baking powder, and baking soda) to the flour mixture and mix until well combined
In a separate bowl, whisk together the egg and plain yogurt until smooth
Combine the two mixtures and beat until a smooth batter forms
Grease a 20cm x 20cm x 5cm loaf pan (or a small baking dish) with 1/4 cup of the reserved flour mixture and spread the batter evenly
Top with the remaining 1/4 cup of flour mixture and bake in a moderate oven (170°C) for 35-40 minutes
Serve warm or at room temperature.
