    Leave one kilo of codfish to soak and, the next day, remove the skin and bones. Cook it and then flake it. Make a good tomato refogado with all the seasonings, add the codfish, and let it fry for a bit. Add a flat plate full of cooked and mashed potatoes and mix well. Let it rest for 20 minutes, then add 2 cups of milk, 1 tablespoon of butter, and bring to the boil again. Let it cool and add the yolks and then the beaten whites. Bake in a greased mold with butter, dusted with breadcrumbs. Serve with a white sauce and garnish with cooked eggs and olives.
