Dissolve the yeast and sugar in warm water
Let it sit for 5 minutes until it becomes frothy
In a separate bowl, mix together the whole wheat flour and salt
Add the yeast mixture to the flour mixture and knead for about 5 minutes until it forms a smooth dough
Place the dough on a floured surface and let it rise in a warm place covered with plastic wrap for about 1 hour and 30 minutes
Divide the dough into two equal portions, shape each portion into a ball, and flatten them slightly
Place each flattened dough onto a baking sheet or pizza stone, leaving space between them
Bake at 350°F (175°C) for about 15-20 minutes
While the crust is baking, prepare the topping by mixing together the cooked spinach, sesame seeds, egg, milk, anchovy fillets, and oregano
Once the crust is done, spread half of the spinach mixture onto each pizza, followed by a layer of tomato slices
Bake for an additional 10-15 minutes or until the cheese is melted and bubbly
Remove from the oven and let it cool before serving.
