1 cup defatted bacon, diced (150g)
2 tablespoons oil
1 cup water (240ml)
5-6 medium-sized cooked and peeled sweet potatoes (about 1kg total)
1/2 cup milk (120ml)
2 tablespoons butter
1 teaspoon grated lime zest
1/4 cup chopped fresh parsley

Mix the beef with salt, nutmeg, and bacon in a medium bowl
Heat the oil in a large skillet over high heat
Add the beef and cook, stirring constantly, until it is cooked through and falls apart easily
Add the water and bring to a boil
Stir well, remove from heat, and let cool
Mash the sweet potatoes and combine with milk, butter, and lime zest in a large saucepan
Heat over medium heat, stirring constantly, until smooth and creamy
Preheat oven to 400°F (200°C)
In a 16.5cm x 26cm baking dish, spread half of the pudding
Fill with the beef mixture and top with the remaining pudding
Bake for 20 minutes or until golden brown on top
Dust with parsley and serve
