1 Cut the linguiça into small pieces
In a small non-stick skillet, heat the olive oil over medium-low heat
Cook the linguiça until browned, about 2-3 minutes
Remove the linguiça from the skillet and set aside
2 Beat the eggs, flour, salt, black pepper, and onion together in a bowl
In the same skillet, add half of the egg mixture and cover
Cook over low heat for 2 minutes
3 Add the remaining egg mixture to the skillet and cook for an additional 5 minutes or until the edges start to brown
Flip the fritters and let them cook for another minute
Serve immediately.
