Mix the ground beef, carrot, tomato juice, onion, parsley, and salt in a large bowl; stir gently with a fork until well combined
Note: when overmixing, the meat may become tough
Shape into patties of about 20cm diameter
Place in a non-stick skillet or oven-safe dish lined with aluminum foil
Bake for 35 minutes or until cooked to desired doneness
Cut into slices
Serve 6 portions each with approximately 260 calories
