2 large eggs

1 tablespoon natural yogurt
2 cups whole wheat flour, fine grind
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1 cup grated carrots

Crack the eggs into a bowl
Beat with a fork
Add the oil, honey, and yogurt
Mix well
Add the whole wheat flour, baking soda, and cinnamon
Mix well
Finally, add the grated carrots
Mix well
Pour into a low-sided mold, about 22cm in diameter, greased and floured, and bake in a moderate oven (180°C) for about 45 minutes
Unmold and decorate with carrot syrup (recipe follows)
