Orange Filling

Beat the butter or margarine until creamy
Add 1 1/2 cups of sugar and beat until well combined
Add the eggs, one at a time, beating well after each addition
Add the dry ingredients, sifted, alternating with milk, beating well after each addition, until smooth
Add the grated orange zest and 1 cup of shredded coconut
Beat the egg whites until stiff peaks form, then add 1/2 cup of sugar and beat until stiff
Fold in the whipped cream mixture and mix carefully
Pour into two round cake pans with a diameter of 9 inches, lined with parchment paper
Bake at moderate temperature (170°C) for about 45 minutes, or until a toothpick comes out clean
Let cool in the pans for 5 minutes before removing from pans
Remove from pans and let cool completely
Cut each cake in half and place the orange filling
Cover with whipped cream topping and sprinkle with shredded coconut (if using dried coconut, moisten with 1/2 cup of milk)
