Grease a 21 cm x 31 cm baking dish with butter and dust with all-purpose flour. Reserve
Aquaint the oven to 180°C (medium)
In a stand mixer, cream together the butter and self-rising flour until light and fluffy (approximately 4 minutes)
Add the egg and vanilla extract and mix well
Gradually add the all-purpose flour, mixing with a wooden spoon as needed
Add the grated lemon zest and blackberry jam, mixing until homogeneous
Transfer to the prepared baking dish and bake in the preheated oven until a toothpick inserted into the center comes out clean (approximately 30 minutes)
Await cooling
Dust with confectioner's sugar and cut into 5 cm x 6 cm pieces
Serve immediately
