Beat the first four ingredients in a blender until smooth
The mixture should yield about 1 cup
If not, add more milk
Beat the sugar with the butter, then add the egg yolks and beat again
Add the panned dry ingredients and the blended mixture to the blender
Beat the whites in a separate bowl until fluffy, then gently fold into the mixture
Pour everything into a greased English muffin tin and bake in a moderate oven
Check for doneness by inserting a toothpick or knife, then remove from the oven
Garnish with this glaze: beat 2 whites until stiff, then add 4 tablespoons of sugar
Beat again and pipe into a pastry bag
Garnish and place in a warm oven to set the glaze
Serve with a dry Madeira wine
