Bite the butter or margarine with sugar and add the yolks, one at a time, beating always until it becomes a smooth and clear cream
Mix in the sweet potatoes and beat well
Sift together the flour and baking powder, alternating with milk to form a dough
Mix thoroughly
Add the orange zest and whites in snow
Mix delicately
Place into a ring mold of 9.25 inches diameter, greased and floured
Bake in a moderate oven (350°F) for about 45 minutes or until a toothpick inserted comes out clean
Unmold and, if desired, dust with sugar.
