1 tablespoon of ground cinnamon
1/4 cup of melted butter or margarine
4 tablespoons of hot milk
1 1/2 cups of pecans or hazelnuts
3 tablespoons of chocolate chips

Mix in a bowl the ricotta or Minas cheese, milk, egg, melted butter or margarine, sugar, vanilla extract, and salt
Sift together the flour and yeast, then add 2/3 of it to the mixture
Mix well, add the remaining third of the flour, and knead until smooth
Lightly grease a surface and cover with several sheets of parchment paper
Roll out the dough on the parchment paper, forming a rectangle of 50 x 40 cm
Prepare the filling: mix in a bowl sugar, vanilla extract, cinnamon, and melted butter or margarine
Add hot milk and stir well; then add nuts and chocolate chips at the end
Distribute the filling evenly over the dough, leaving 2 cm free from the edges
Roll up the dough starting with the shorter side, as if it were a croissant, applying gentle pressure with the parchment paper
Wrap in plastic wrap and refrigerate for at least an hour to firm up
When firm, cut into 15 equal pieces, discarding the two ends
Grease a mold with a central hole of 25 cm diameter, and place the rolls around the edge and then in the center
Bake in a moderate oven (170°C) for 40 minutes or until golden brown.
