4 thick slices of Italian bread
1/4 cup (chopped) extra virgin olive oil
4 cloves of garlic, minced
4 medium tomatoes, peeled and seeded, diced
To taste salt
4 tablespoons fresh basil leaves, chopped
1/3 cup grated Parmesan cheese

Preheat the oven to medium temperature
Bake the bread for about 10 minutes
In a small pan, heat the olive oil over low heat and sauté the garlic until it starts to brown
Add the tomatoes and season with salt
Stir quickly and remove from heat
Remove the bread from the oven and use a fork to spread the tomato mixture evenly, avoiding excess liquid
Sprinkle with basil and Parmesan cheese and serve with black olives.
