2 large Italian bread slices, cut into thick slabs
8 ripe tomatoes, seedless, diced
Salt to taste
4 finely chopped garlic cloves
1 cup of extra virgin olive oil
2 tablespoons of fresh basil leaves, finely chopped
2 whole garlic cloves

Preheat the oven to medium (180°C) and toast the bread slices for 10 minutes or until lightly golden
Remove from the oven and reserve
In a bowl, mix together the remaining ingredients, except for the whole garlic cloves, and let it rest for 30 minutes
Rub the toasted bread with the minced garlic and top each slice with 1 tablespoon of the tomato mixture
Garnish with fresh basil leaves and serve.
