3 tablespoons of olive oil
1 chopped onion
2 tomato halves, seeds and peels removed
1 yellow pepper, cut into cubes
1 sliced garlic clove
Salt to taste
Ground black pepper to taste
2 1/2 cups of vegetable broth
12 whole sardines, cleaned
3 tablespoons of chopped fresh parsley

In a large pot, heat the olive oil and sauté the onion until golden brown
Add the tomato and cook for two minutes
Add the yellow pepper, garlic clove, salt, black pepper, and cook for five minutes
Add the vegetable broth and bring to a simmer
Once boiling, reduce the heat to low, carefully place the sardines on top of the stew, cover the pot, and cook for 10 minutes without stirring
Turn off the heat, sprinkle with parsley, and serve.
