1 kg of beef shank or beef ribs (with bone), cut into pieces

In a large pot, put in 12 cups of water and when it starts boiling, add all the ingredients
Cook over low heat with the pot partially covered for 2 hours
As it cooks, periodically remove the foam that forms using a skimmer
Let it cool and remove the beef
Strain the broth through a fine-mesh sieve
It's ready to use in recipes
