In a large pot, place the chicken, water, and salt
Bring to a boil over high heat
Remove the foam that forms on top of the water
Add the remaining ingredients, cover, and cook for 1 hour and 15 minutes or until the chicken is tender
Remove the pot from the heat and strain the broth through a fine-mesh sieve.
