For the dough
"1 cup of all-purpose flour"

1 tablespoon of water
Cilantro leaves
For the stew
Fish carcass and head of a 3 kg fish
1 large onion
2 cloves of garlic
2 tomatoes without seeds
8 cups of water
10 sprigs of cilantro

Place the flour on a flat surface
Make a depression in the center and add salt, egg, and water
Mix with a fork making circular motions from the inside out until you get a dough
Knead well
Wrap the dough in plastic film or aluminum foil and let it rest for 30 minutes
Cook all the stew ingredients for 30 minutes, covered
Strain and reserve
Unfold the dough thinly over a floured surface
Cut into strips of about 5 cm width
On one side, place cilantro leaves leaving a space between them
Fold the other side over the cilantro
Roll out the macaroni over the dough and cut into squares
Cook the reserved stew and cook the prepared dough in small quantities until it's cooked
Serve the stew still hot or cold with the squares of dough
