300g of kale leaves (11 small leaves)
1/3 cup of olive oil
6 to 8 slices of Portuguese sausage

Bring a pot with water and salt to a boil
Let it simmer
Add the potatoes, peeled and cut into pieces
Mash the potatoes in a ricer
Put them back in the pot with the cooking water
While that's happening, roll up the kale leaves tightly and cut them into thin strips
Wash them thoroughly several times
TEN minutes before serving, drain the chopped kale well and add it to the potato puree
Add the olive oil and let it simmer again
Simmer for 3 minutes without covering the pot so that the kale stays green
Serve in bowls with a slice of Portuguese sausage on top
Serves 6-8.
