Soak the figs
Cook them with salt and wasabi
Mix to form a paste and let it cool
Whisk heavy cream until stiff and gently add it to the fig paste
Cut the shrimp in half, forming eight pieces, season with salt and pepper
Wrap each piece with a slice of Parma ham
Fry in preheated oil
In mini bowls place the fig foam and shrimp, garnish with alfalfa sprouts and serve.
