2 cups cooked and shredded chicken breast
1/2 cup mayonnaise
1/2 teaspoon mustard
1 tablespoon curry powder
1/2 cup chopped, toasted almonds or pecans
1 tablespoon lemon juice
salt and pepper to taste
16 slices of white bread
1/3 cup lightly toasted and chopped pecans or almonds
2 cups cooked and shredded chicken breast

In a bowl, combine the chicken breast, mayonnaise, mustard, curry powder, chopped nuts, lemon juice, and season to taste
Spread 1 tablespoon of this mixture over each of the 64 bread rounds, cut into quarters (about 4 cm in diameter)
Place the almonds or pecans in a baking dish and arrange the bread slices with the filling side down on top of the nuts
Turn and arrange on a platter
Serve immediately.
