Place the egg yolks in a heatproof bowl and set it over a pot of simmering water, making sure the bowl is not touching the water
Let it cook for 15-20 minutes or until the eggs are cooked
Let it cool down completely before passing the eggs through a fine-mesh sieve or blending them in a blender to get a smooth puree
Beat the butter or margarine until creamy, then add the egg yolks, salt and black pepper
Mix well
Add your desired seasoning, such as mustard, ketchup, or Worcestershire sauce
Use this mixture on canapés by spreading it with a knife or piping bag, decorating with a pastry bag if desired
Serves 1 1/4 cups.
