Prepare the basic beef. In place of butter or margarine, fry 6 slices of bacon or some salted pork belly (minced) and sear the beef in that fat. Add 6 chopped onions and let them caramelize. Pour 1 1/2 cups of red wine over this. Add a sprig of rosemary. Cover and cook, adding more wine if necessary.
