1 kg of mole or alcatra beef
Salt and pepper to taste
1 medium onion, finely chopped
2 tablespoons olive oil
1/2 cup breadcrumbs
1/2 cup hot water
1/2 cup green corn from a can, drained

1 1/2 cups water
2 beef bouillon cubes
1 tablespoon all-purpose flour
1/4 cup water

Preheat the oven
The beef should be cut into large slices
Use a meat mallet to pound the beef
Season with salt and pepper
Fry the onion in 2 tablespoons of olive oil until it's soft
Add the breadcrumbs and mix well
Add 1/2 cup of hot water and corn, and stir
Spread the mixture over the beef
Roll up and tie with kitchen twine
Baste the beef on all sides with 2 tablespoons of olive oil
Combine 1 1/2 cups of water and beef bouillon cubes
Cook slowly over low heat or in the oven until the beef is tender
Remove the string from the beef and arrange it on a platter
Mix 1 tablespoon of flour with 1/4 cup of water
Add to the remaining sauce, stirring until thickened
Check the seasoning
Serves 4-6 people
