Season the fish with salt and lemon juice
Place the spinach on top of the water that remains after washing it, in a large pot
Cover and cook the spinach until it wilts
Drain and chop coarsely
Heat the olive oil in a large skillet, add the onion and sauté for 4 minutes or until translucent
Add the spinach and cook for 2 minutes
Season to taste
Arrange the spinach and palm hearts in a baking dish
Place the fish on top and bake in a preheated oven at 200°C (400°F) for about 30 minutes or until the fish is cooked
Serve hot, garnished with 6 sprigs of parsley.
