Dry-fry the olive oil and sauté the onion
Add the tomatoes and stir for 5 minutes
Add the rice, parsley, and stir for another 5 minutes
Add the chicken, ricotta, and salt
Gradually add hot water, stirring occasionally, to avoid mashing the chicken
Remove from heat and serve immediately.
