Cut the meat into thin strips
In a small bowl, mix the meat with 1/4 cup of cornstarch and 1/4 cup of special sauce. Reserve
Set aside the broccoli florets and stems, reserving them for another use
Cut the stems and florets in half - lengthwise - and reserve
Heat a large skillet over medium heat
Add half of the olive oil and cook until melted
Add some pork chunks and fry until browned and cooked through
Remove with a slotted spoon and set aside
Remove any excess oil from the skillet, then add the remaining pork chunks and broccoli
Cook until the broccoli is tender - about 4 minutes
Add the tomatoes and reserved pork
Mix well to combine
Serve hot, garnished with fresh herbs if desired.
