1 kg of dried cod
1 liter of water for soaking

3 cloves of garlic, minced
3 tomato halves, seeded and chopped
2 tablespoons of dendê oil
2 sprigs of cilantro, chopped

2 tablespoons of tomato puree
1/2 cup of coconut milk

Pepper to taste
Sauce
2 cups of cooking water from the cod
1/4 cup of rice cream flour
1 small onion, grated
1 tablespoon of dendê oil
Salt and pepper to taste

Cook the cod in its last change of water for 15 minutes
Drain and reserve four cups of water
In a pan, heat the olive oil, sauté the onion, garlic, and tomato
Add two cups of reserved water, dendê oil, cilantro, bay leaf, and tomato puree
Simmer until thickened
Add coconut milk, cod pieces, pepper, and simmer for another 10 minutes
Sauce
In a pan, combine the remaining cooking water from the cod and rice flour
Add onion, dendê oil, salt, and pepper
Simmer until thickened
Serve the dish with the sauce.
