1/2 kg of white beans
Salt to taste
1 onion threaded with 3 whole cloves
2 sprigs of fresh thyme (aipão)
1 bay leaf
2 tablespoons of olive oil or margarine
1 kg of pork loin cut into 2 cm squares
1 cup of chopped onion
1 minced garlic clove
1 cup of tomato puree
Black pepper to taste

In a large pot, cook the white beans with 2 liters of water and 1 tablespoon of salt for 2 minutes
Remove from heat
Let it rest for 1 hour
Add the onion with cloves, thyme, and bay leaf
Cover and simmer for 1 hour
Meanwhile, melt the olive oil or margarine and brown the pork loin and chopped onion
Remove excess fat if necessary
Add salt to taste, garlic, and 1 1/2 cups of water
Cover and simmer slowly for 40 minutes
Add tomato puree and black pepper; continue cooking until the meat is tender
Drain the white beans
Remove the onion, thyme, and bay leaf
Add the white beans to the pork loin
Let it cook slowly for approximately 10 minutes, stirring occasionally
Serve in 6 portions.
