Fry the onion and garlic in olive oil
When they start browning, add the ground beef, oregano, pimenta sauce, parsley, and scallions
Cook until the meat is cooked through and falls apart easily
Remove from heat
Season with salt, black pepper, and green scallions
Place in a rectangular or round baking dish and sprinkle shredded catupiry cheese on top
Beat the eggs until they double in volume and sift over the flour and a pinch of salt
Mix delicately
Pour over the meat and mix lightly
Bake in a preheated oven at 200°C until the topping is golden brown and puffed up
Serve warm, cut into 6 pieces
Variation: Substitute chicken breast for ground beef
Add chopped fresh cilantro or green onions on top.
