1 kg of beef
1 large onion, finely chopped
3 cloves of garlic, minced
2 1/3 teaspoons of salt
1/4 cup of vinegar
5 tablespoons of olive oil
1/2 teaspoon of black pepper
1/3 cup of all-purpose flour
4 ripe tomatoes, seedless and halved
2 tablespoons of chopped fresh parsley
3 cups of water

Clean and cut the beef into large cubes
Season with salt, garlic, black pepper, and vinegar
Dredge the beef in flour
Heat the olive oil in a pressure cooker and sauté the onion until it's lightly browned
Add the beef and cook for 15 minutes, stirring occasionally
Add the tomatoes and parsley, then cover the cooker and simmer for 40 minutes
Remove the lid, taste the seasoning
If desired, add sliced carrots to the braising liquid and simmer without covering the cooker until they're tender
Freeze in plastic containers with lids or aluminum pans
Thaw for 2 hours, then reheat in a pan
