4 to 6 cups of leftover beef or pork, cooked or roasted, and cut into thin strips
3 tablespoons of cornstarch dissolved in 1/2 cup of soy sauce
1 1/2 teaspoons of fresh ginger, minced, or 1/4 teaspoon of ground ginger
3 tablespoons of cooking wine or dry sherry
2 cloves of garlic, mashed
season to taste
3 tablespoons of oil for frying

Mix all the ingredients in a bowl, add the beef and stir until it's evenly coated
Make sure the beef is well coated with the marinade
Heat the oil in a wok or large skillet over medium-high heat, add the beef and fry until it's cooked through
Serve immediately over rice
