1/4 cup of crumbled bacon bits
1/4 cup of chopped onion
1/2 cup of grated carrot
1 can of green peas, drained
2 tablespoons of chopped fresh parsley
1/4 cup of breadcrumbs
1/2 cup of grated cheddar cheese
1 cup of beef broth

Flesh and season the meat with salt and black pepper
Make the stuffing: In a pan, melt the butter or margarine
Add the scallions, bacon bits, onion, and carrot
Fry until they're crispy and tender
Add the green peas, parsley, breadcrumbs, and cheddar cheese
Mix well
Cover the meat with the stuffing, roll it up, and tie with kitchen twine
In a pan, melt the oil, add the meat, and fry until it's browned on all sides
Add the beef broth and cook until the meat is tender (about 30 minutes in a pressure cooker)
Add more broth if needed
To serve, remove the twine and slice into portions
Serve with 6 servings.
