1 lb of sweet potatoes
8 slices of bacon
1 chopped onion
2 tablespoons of cornstarch
6 tablespoons of vinegar
1 tablespoon of cumin
1/2 cup of water
salt and black pepper to taste
1 tablespoon of chopped fresh cilantro
2 cooked eggs
1/2 pound of sausage
1 lb of sweet potatoes

Boil the peeled sweet potatoes in salted water, cut into regular pieces
Then, set them aside
In a pan, fry the bacon slices without adding extra fat
When it's toasted, remove it from the pan and let it drain on paper towels
In the same pan, fry the chopped onion until it's translucent, then add the cornstarch mixed with vinegar, cumin, and water
Stir constantly to prevent lumps, then season with salt and black pepper to taste
When the sauce is cooked, mix in the sweet potatoes, stirring carefully not to mash them
Then, add the fried bacon
Cut the sausage links into halves and place them around a baking dish, leaving one half submerged below
Fill the dish with the sweet potato mixture, garnish with sliced eggs and sprinkle with chopped cilantro
Put it in the oven just to cook the sausages.
