1 Soak the quinoa in water for 15 minutes
Drain well and reserve
2 Cook the chicken breast in chicken broth until tender
Let it cool and shred
3 In a salad bowl, mix the shredded chicken, quinoa, onion, tomato, salmon, and parsley
