500 g ground beef or pork loin (1 large slice)
salt and pepper to taste
For the filling:
3/4 cup fresh leek, peeled and chopped
1 medium onion, peeled and chopped into small cubes
1 1/2 cups breadcrumbs from breakfast bread
1 tablespoon finely chopped onion
1/4 teaspoon salt
3 tablespoons butter or margarine
1 cup hot water
Trim the edges of the ground beef or pork loin, season with salt and pepper, and reserve
Fry the leek and onion in a pan until the excess fat is drained
Combine the chopped onion, breadcrumbs, and salt, mixing well
Cover the beef with this mixture and roll it up, securing tightly
Melt the butter or margarine in a pressure cooker and brown the beef on all sides
Add hot water, close the cooker, and secure the valve
When the valve starts to wobble, cook for 35 minutes
Let it cool naturally for 5 minutes, then rinse with cold running water
Remove the beef from the pressure cooker and unwind it
Cut into slices and place on a warm platter
If desired, thicken the remaining sauce in the cooker and spoon over the sliced beef
