Cook the beef in a pressure cooker for about 40 minutes or until tender
Drain the liquid and reserve

Heat the olive oil in a pan, sauté the zucchini cubes without breaking them apart, gradually adding the vegetable broth

Add the beef, the remaining vegetable broth, and the broad beans
Cook for another 10 minutes and turn off the heat
Sprinkle with chopped scallion and serve with rice.
