Crust
1 cup of water
1/2 cup of butter
1 cup of all-purpose flour
3 eggs

1 1/2 cups of heavy cream
3 egg yolks
2 tablespoons of cornstarch

1/2 cup of grated cheddar cheese
3 tablespoons of unsweetened cocoa powder
Sauce
2 cups of pineapple juice
2 1/2 tablespoons of cornstarch
1/2 cup of grated cheddar cheese
A pinch of cinnamon

Crust
1 In a saucepan, combine the water and butter
Heat over medium heat until melted
Add the flour all at once and mix well
Remove from heat and transfer to a bowl
Add one egg at a time, beating until a smooth and creamy dough forms
2 Place the dough in a piping bag and shape into tarts
Bake in a hot oven until the dough rises
Reduce oven temperature and continue baking until the crust is dry
Filling
In a saucepan, combine the heavy cream and heat over medium heat until warm
In a separate bowl, whisk together the egg yolks, cornstarch, flour, and cheddar cheese
When the cream comes to a boil, pour some into the egg yolk mixture and mix well
Return the mixture to the saucepan with the remaining cream, whisking constantly over low heat until thickened
Remove from heat and stir in the cocoa powder
Let cool
Sauce
Combine all ingredients and bring to a simmer over medium heat
Assembly
Cut the tart in half and fill with the cream cheese filling
Serve with warm pineapple sauce.
