2 tablespoons of lemon juice
4 green onions, finely chopped
1 tablespoon of chopped fresh parsley

Slice the zucchinis into thin strips, lengthwise, with a vegetable peeler
Arrange them folded in half on a platter, cover with plastic wrap and refrigerate until serving time
Prepare the dressing: In a blender, combine the ricotta cheese, yogurt, and lemon juice
Season and blend well
Remove from blender, add green onion and mix
Cover with plastic wrap and chill
When serving, sprinkle parsley over the zucchinis and top with the dressing
Serve 8.
